Pumpkin Muffins

Ingredients:

  • 1/2 C almond flour
  • 1 C gluten free flour
  • 1/2 C coconut flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp ground cinnamon
  • 1 tsp group finer
  • 1/2 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 1/2 C coconut sugar
  • 8 T molasses
  • 1/4 C coconut oil
  • 2 eggs
  • 1 C pumpkin
  • 1 tsp vanilla
  • 3/4 C coconut milk  w/ 1/2 tsp white vinegar
  • 1/2 C nuts & seeds (chia, flax, walnuts, sunflowers, etc)
  • 1/4 C dried cranberries or dried fruit

Directions:

Preheat oven to 400 degrees. Oil or spray a 12 muffin pan/ or use liners.  In a medium bowl, mix all dry ingredients.  In a separate bowl, mix all wet ingredients.( I use a blender).  Combine all ingredients and add nuts, seeds & dried fruit.  Tap the pan on the counter a few times to remove any air bubbles. Bake for 20-30 min until a toothpick inserted comes out clean.
