Pumpkin Muffins
Ingredients:
- 1/2 C almond flour
- 1 C gluten free flour
- 1/2 C coconut flour
- 1 tsp baking soda
- 1/2 tsp salt
- 2 tsp ground cinnamon
- 1 tsp group finer
- 1/2 tsp ground cloves
- 1/4 tsp ground nutmeg
- 1/2 C coconut sugar
- 8 T molasses
- 1/4 C coconut oil
- 2 eggs
- 1 C pumpkin
- 1 tsp vanilla
- 3/4 C coconut milk w/ 1/2 tsp white vinegar
- 1/2 C nuts & seeds (chia, flax, walnuts, sunflowers, etc)
- 1/4 C dried cranberries or dried fruit
Directions:
Preheat oven to 400 degrees. Oil or spray a 12 muffin pan/ or use liners. In a medium bowl, mix all dry ingredients. In a separate bowl, mix all wet ingredients.( I use a blender). Combine all ingredients and add nuts, seeds & dried fruit. Tap the pan on the counter a few times to remove any air bubbles. Bake for 20-30 min until a toothpick inserted comes out clean.
